Blue Cheese Pasta Bake with Bacon and Mushrooms

I’ve said it before, and I’ll say it again. Pasta is life. Seriously, there’s nothing better. This blue cheese pasta bake recipe is so creamy and rich. Super simple to make yet seriously impressive in terms of flavour, this easy pasta recipe uses minimal ingredients for maximum impact. Crispy bacon bits, tasty mushrooms and chunks of blue cheese make this a dinner you’re bound to go back again for more.

Blue cheese is a polarising ingredient admittedly, but this pasta isn’t overpowered by it. Using a small amount of blue cheese really goes a long way and helps to add a really funky, but delicious taste that will have you salivating.

When making pasta and pasta sauces, it’s important to remember to save some of the starchy salted pasta water . When added to the thick cream based sauce, it’ll elevate the flavour whilst thinning the sauce out and making it perfect for coating the penne.

This blue cheese pasta bake is perfect for feeding a crowd. It’s cheap, simple yet jam packed with flavour. For a nice textural addition, tender-stem broccoli or a sprinkling of baked breadcrumbs atop is delicious. Omit the bacon for a veggie-friendly version that tastes just as good. Being a carnivore, bacon is a welcome addition to any recipe and I feel it adds an additional flavour to this recipe – and I’m all about flavour.

This rich pasta dish is creamy and delicious - and the addition of blue cheese really elevates the flavour.

  • 400 grams penne cooked a few minutes under done
  • 1 tsp oil
  • 1 garlic clove minced
  • 2 rashers bacon cut into small pieces
  • 150 grams mushrooms sliced thinly
  • 150 ml single cream
  • 50 grams St Agur Blue Cheese
  1. Preheat oven to 180C.

  2. In a saucepan, heat up the oil over a medium heat. Add the garlic and bacon and cook until bacon is crisp.

  3. Add the mushrooms and cook for another couple of minutes before adding the single cream and blue cheese. Cook until blue cheese has melted and the sauce thickens.

  4. Add a ladle of pasta water to the sauce, and mix in the pasta. Coat the pasta in the sauce.

  5. In a baking dish, place the pasta, and top with a few chunks of blue cheese. Bake in the centre of the oven for 20 minutes and then serve with garlic bread for a delicious, filling meal.
